Chocolate Truffles

This super easy, yet decadent treat is fantastic to make during these last few weeks of Winter, as the cooler temperature makes it easier to handle. But otherwise this is fantastic year round! (Believe me, these taste almost like the chocolate truffles from Maison Auer in Nice, France).



  • 8 oz of chopped +60% chocolate

  • 8 oz of chopped milk chocolate

  • 1 cup of heavy cream

  • A pinch of fleur de sel

  • Cocoa powder for rolling


  1. Put the cream, chocolate, and salt in a double boiler

  2. Whisk until fully melted and a mirror-like shine develops

  3. Pour into a separate dish and set aside to cool ~45min - 1 hour

  4. Use two spoons and scoop out a lump the size of a gumball onto a parchment paper - lined baking sheet

  5. Leave to set in the fridge for 30min

  6. Quickly roll the lumps into a rough ball and toss in the cocoa powder to add extra chocolate flavor and prevent clumping

  7. Leave to set in the fridge for another 30min

  8. Serve when ready

  9. Done.
