Mint and Lemon Fizz

After all of this heavy food I’ve been making, how about something refreshing and light to cleanse the stomach? May I suggest a Mint and Lemon Fizz? Simple, easy and refreshing (you may even forget about this onslaught of a winter).

Ingredients:

  • One whole lemon peeled of its skin

  • A hand full of mint leaves

  • Splash of water

  • Sparking water (I always prefer Perrier)

  • Ice cubes (one square cocktail one is ideal)

Directions:

  1. Throw the lemon and mint leaves and water into a blender or hand-held blender.

  2. Blitz until completely turned into a juice.

  3. Place ice cubes in a glass.

  4. In the glass, press through a fine meshed sieve to remove the pulp.

  5. Top with the sparkling water.

  6. Stir until combined.

  7. Garnish with a lemon slice and mint sprig.

  8. Done.
