Mint and Lemon Fizz
After all of this heavy food I’ve been making, how about something refreshing and light to cleanse the stomach? May I suggest a Mint and Lemon Fizz? Simple, easy and refreshing (you may even forget about this onslaught of a winter).
One whole lemon peeled of its skin
A hand full of mint leaves
Splash of water
Sparking water (I always prefer Perrier)
Ice cubes (one square cocktail one is ideal)
Throw the lemon and mint leaves and water into a blender or hand-held blender.
Blitz until completely turned into a juice.
Place ice cubes in a glass.
In the glass, press through a fine meshed sieve to remove the pulp.
Top with the sparkling water.
Stir until combined.
Garnish with a lemon slice and mint sprig.
