A classic and potent drink that I remember having during my first time in New Orleans. After a few of these, the night melds into the New Orleans spirit and you may find yourself miraculously munching away at beignets at Cafe du Monde later in the night...
1 sugar cube
3 dashes of Angostura bitters
2 oz of bourbon
Dash of water
1 tsp of absinthe
Muddle sugar and bitters in the bottom of a cocktail mixing glass.
Pour in the bourbon along with drops of water.
Fill with ice.
Stir for 30 seconds.
In your serving glass, add absinthe, swirl around to coat, and dump out the excess.
Pour your stirred cocktail through a strainer.
